Christmas baking planner - calendar, shopping list and labels

What a Christmas baking planner actually is

Christmas baking goes wrong in one specific way: everything is attempted in the same ten days, in the same oven, by the same person, while the shops are at their busiest and the flour runs out on a Sunday. A Christmas baking planner is the small system that prevents it — a calendar (what bakes when, spread across five weeks instead of one), a shopping list built from that calendar (so nothing is bought twice or forgotten), and labels (what each finished bake is, when it was made, and who it is for). This guide gives you all three, plus two dependable recipes to anchor the plan. The secret it runs on is simple: most Christmas baking freezes beautifully, which means December's work can mostly be done in November.

The five-week baking calendar

Late November — dough week. Make the doughs that freeze: shortbread, ginger biscuit dough, any slice-and-bake cookie dough. Portion them, wrap tightly, label with the name and baking temperature, and freeze. Raw cookie dough keeps well for up to three months frozen, so this week does December's hardest work while the kitchen is calm. This is also the week to bake a traditional fruit cake if you make one — it improves with keeping.

First week of December — the keepers. Bake the sturdy things that store well in tins: shortbread and ginger biscuits from your frozen dough, biscotti, spiced nuts. Packed in airtight tins with a sheet of baking paper between layers, plain biscuits like these stay good for two to three weeks — which carries them exactly to Christmas.

Second week of December — gifting week. Assemble gift boxes and bags now, while you are not yet cooking Christmas dinner in your head. Box, label and list every gift bake (the labels section below), and deliver the ones for colleagues, teachers and neighbours this week, not in Christmas week.

Third week of December — the fresh list. Only now bake the things that do not keep: anything with fresh cream, soft icings, meringues, and the mince pies (unbaked mince pies, by the way, freeze very well — bake them from frozen in the final days). Keep this list deliberately short; its whole job is freshness, not volume.

23–24 December — oven truce. The oven belongs to Christmas dinner prep. The only baking allowed is warming what is already made. Write this on the calendar in November, when you are feeling ambitious, and thank yourself later.

What freezes, what keeps, what does not

Freezes brilliantly: raw cookie and biscuit dough (up to 3 months), unbaked mince pies, fruit cake, sturdy baked biscuits and brownies (about a month, well wrapped). Keeps in a tin: shortbread, ginger biscuits, biscotti and other dry, plain bakes — two to three weeks airtight, away from anything strong-smelling. Bake fresh: anything with fresh cream or cream cheese frosting, meringue, soft caramel toppings, and delicate iced biscuits, whose icing bleeds in a tin. When in doubt, freeze the dough rather than the finished bake — it takes less space and tastes fresher.

The shopping list system

One master list, built from the calendar, in four passes. Pass 1 — the store cupboard (buy in November, ideally when offers appear): flour, sugars, butter (butter freezes — buy it when it is cheap), eggs nearer the time, golden syrup, spices, dried fruit, nuts, chocolate, vanilla. Pass 2 — tins, boxes and labels: gift boxes or bags, baking paper, ribbon, label stickers — bought once, with the first pass, not in a panic later. Pass 3 — fresh things for the third week only: cream, citrus, fresh berries. Pass 4 — the forgotten-things check: two days before any bake, read the recipe top to bottom and check every ingredient physically exists in the house. The recipe for our main Christmas Budget Calculator applies to baking too: decide the gift-bake budget now, because ingredients for "a few small gifts" have a way of becoming a second food shop.

Recipe 1 — classic shortbread (the 3-2-1 rule)

Shortbread is remembered by weight: 3 parts flour, 2 parts butter, 1 part sugar. For one good batch: 300g plain flour, 200g butter (cold, cubed), 100g caster sugar, and a pinch of salt. Rub the butter into the flour and salt with your fingertips until the mixture looks like breadcrumbs, stir in the sugar, then press — do not knead — it into a dough. Roll or press to about 1cm thick, cut into fingers or rounds, prick with a fork, and chill for 20 minutes (this is what keeps the edges sharp). Bake at 160°C / 325°F for 18–22 minutes until pale gold at the edges, never browned. Cool on the tray; it firms as it cools. The dough freezes perfectly for three months — slice-and-bake straight from the freezer, adding two minutes.

Recipe 2 — ginger biscuits

For about 24 biscuits: 350g plain flour, 1 teaspoon bicarbonate of soda, 2 teaspoons ground ginger, 1 teaspoon ground cinnamon, 125g butter, 175g light brown sugar, 1 egg, and 4 tablespoons golden syrup. Melt the butter, sugar and syrup together gently, let it cool a little, then stir in the beaten egg. Tip in the flour, soda and spices and mix to a dough; chill for 30 minutes so it rolls cleanly. Roll to about 5mm, cut your shapes, and bake at 180°C / 350°F for 10–12 minutes until just firm at the edges — they crisp as they cool. Ice them if you like, or leave them plain for gifting; plain travels better. The dough is another three-month freezer resident.

Labels: the step everyone skips and everyone needs

Every bake that leaves your sight needs three facts: what it is, when it was baked, and any allergen a recipient must know (nuts, gluten, dairy). For gifts, add "best within 2 weeks" style guidance so nobody saves your shortbread for Easter. Write labels when you box, not when you deliver — a box labelled "ginger biscuits, baked 10 Dec, contains gluten" answers every question a teacher, neighbour or colleague might have, and your own future self will be grateful when the freezer holds four identical wrapped doughs. This tiny system — calendar, list, labels — is the whole planner. If you would like the thinking applied to the entire month, our guide to Christmas spending and the Christmas Gift Finder cover the gifts side of the same season.

Frequently asked questions

How early can I start Christmas baking? Earlier than you think: doughs from late November (three months in the freezer), keeping biscuits from the first week of December, and only fresh items in the final week. The calendar above is built on exactly that rhythm.

Can I freeze baked cookies, or only dough? Both. Dough freezes best and tastes freshest, but sturdy baked biscuits freeze well for about a month if wrapped airtight. Thaw them still wrapped so condensation lands on the wrapping, not the biscuit.

How many bakes should be on the gift list? Two dependable recipes, made in double batches, beat six experiments. Shortbread and ginger biscuits between them cover teachers, neighbours, colleagues and the biscuit tin at home — add a third only if you genuinely love making it.

What is the cheapest way to gift home baking? Buy ingredients in November (butter and nuts on offer), use boxes and labels you already own where you can, and keep each gift to one excellent thing rather than an assortment. A small labelled box of shortbread reads as generous; it does not need three companions.
